Tomatillo Sauce (See our recipe from September!)
2 Large Chicken Breasts*
1 large or 2 small onions
4 Cloves of Garlic
1 tablespoon Cumin
1 teaspoon Coriander
1 1/2 cups chicken or veggie stock
1 bunch Cilantro
1 tablespoon dried Oregano
To make this recipe vegetarian just leave out the chicken, use vegetable stock, and add some white or pinto beans!
Make tomatillo salsa (see our recipe from September! You just broil tomatillos, garlic, spicy pepper, and blend it with lime).
Cut the chicken into 2 in cubes. Heat a large pot on medium high heat and add a splash of oil. Space the chicken pieces out and brown one side. Once one side is brown flip it and brown the other. Remove the browned, not fully cooked chicken.
Cook down the chopped onion on medium heat in the pot you cooked the chicken in until starting to get soft. Add the spices and chopped garlic and cook 3-5 minutes. Add the stock and tomatillo salsa you blended up. Add the chicken and 1/2 the cilantro bunch and simmer for 10 minutes. Add some sour cream, lime, and the rest of the cilantro on top and enjoy! I like to crisp up some corn tortillas to eat with it.
